Split Pea Soup
Low in Salicylates, Amine and Benzoates
Prep. Time: 15 minutes Cook Time: 2 hours
2 cups split peas, rinsed
3 Tbsp. vegetable oil
2 medium onions, chopped
2 cloves minced garlic
6 carrots, chopped
4 celery stalks, chopped
salt to taste
- Place split peas in a heavy saucepan. Add water to cover. Let soak for 15 minutes. Drain peas. Return to same pan. Add water to cover by 1 inch and bring to a boil. Reduce heat and simmer for 45 minutes.
- Heat oil in heavy large skillet over medium heat. Add onion and saute until golden brown, about 10 minutes. Add garlic and saute for 3 minutes. Add onion mixture, carrots and celery to peas. Season with salt to taste.
- Simmer until peas and vegetables are tender, about 30 minutes.
