Split Pea Soup

Low in Salicylates, Amine and Benzoates

Prep. Time:  15 minutes  Cook Time: 2 hours

Serves 4

2 cups split peas, rinsed

3 Tbsp. vegetable oil

2 medium onions, chopped

2 cloves minced garlic

6 carrots, chopped

4 celery stalks, chopped

salt to taste

  1. Place split peas in a heavy saucepan. Add water to cover. Let soak for 15 minutes.  Drain peas.  Return to same pan.  Add water to cover by 1 inch and bring to a boil.  Reduce heat and simmer for 45 minutes.
  2. Heat oil in heavy large skillet over medium heat. Add onion and saute until golden brown, about 10 minutes. Add garlic and saute for 3 minutes.  Add onion mixture, carrots and celery to peas.  Season with salt to taste.
  3. Simmer until peas and vegetables are tender, about 30 minutes.
