Crunchy Cabbage Salad

Low in Salicylates, Amine and Benzoates

Prep. Time:  15 minutes  Cook Time: 10 minutes

Serves 4

½ medium head cabbage

2 green onions

2 Tbsp. toasted sesame seeds

½ cup raw cashew pieces

  1. Toast raw cashews in the oven at 350 F for 5-10 minutes, stirring occasionally.
  2. Thinly slice cabbage and green onions. Toss with sesame seeds and cashews in a large salad bowl.

 

Quinoa Salad

Low in Salicylates, Amine and Benzoates

Prep. Time:  10 minutes  Cook Time: 20 minutes

Serves 4

 

1 cup quinoa, rinsed well

2 cups water

pinch of salt

2/3 cup chopped carrots

¼ cup chopped green onions

1/3 cup chopped parsley

¼ cup sunflower seeds

3 cloves garlic, minced

3 Tbsp. lime juice

2 Tbsp. oil

  1. Combine quinoa, water and salt in a medium saucepan. Bring to a boil. Cover, reduce heat to low and cook for 15-20 minutes.  Let sit uncovered for 5 minutes.  Fluff with fork and let cool.
  2. Add carrots, green onions, parsley, seeds and garlic to quinoa. Combine lime juice and oil add to salad and toss well.
