1 tsp. sunflower oil optional addition:
1 cup brown rice syrup 1/2 cup cashews
2 tbsp. cashew butter or sunflower seed butter
2 tsp. vanilla extract
6 cups Rice Krispies or Ewerwhon Crispy Rice Cereal
Put oil into a large pot and heat. Add rice syrup and nut butter; stir and heat until bubbles form. Turn off heat and add vanilla extract. Add cereal and mix well with a spatula. Stir in nuts(optional) and mix lightly. Press into a 9” X 13” pan. With slightly wet hands, press mixture flat. Let mixture set to room temperature. Cut and serve.
Makes 24 squares.
Garlic Garbanzo-Rice Crackers
11/2 C Garbanzo bean flour
1/2 C Rice flour
1/2 tsp Baking powder
1/4 C Sunflower oil
1/2 C Water or rice milk
2 tbsp Water
1 Clove Garlic, minced fine
Coarse salt as desired
Sesame Seeds as desired
Mix dry ingredients; mix wet ingredients with garlic. Add wet to dry and mix; dough will be very stiff. Knead for five minutes on lightly floured surface. Roll out very thin to 1/8” thickness. Either cut into squares or rounds (any cookie cutter will work). Sprinkle with coarse salt and sesame seeds if desired (press in firmly). Bake at 350 for approximately 10 minutes.
